I know someone with chronic liver disease. Dandelion infusions help, but I know an alcohol infusion would be more potent. But he can't consume any alcohol, so do you know if there's an alternative substance, safe for the liver, that I can tincture dandelion in, that would extract all the strong components?

Is there any reason you are not using raw organic vinegar? As far as I know the vinegar you are using is white vinegar with caramel coloring added.

lemon balm or aka melisa officinalis is a tasty vinegar also.
so the medicinal properties go into the vinegar? would this work for other herbs? How does this kind of infusion compare to water or alcohol infusions?

use any kind of herbs. vinegar infusion is a nice way to get the minerals from the herbs, and easy to incorporate into your cooking as salad dressing or added to beans, etc..
Water infusions are the best for getting LOTS of minerals and nutrients on a regular basis.
Alcohol infusions are strong medicines good for acute or chronic situations..
