I think,saying that you are bisexual, is a way of telling your (less enlightened) acquaintance that you are not going to become an extreme person.
It's like saying: I'm a regular guy, but I just like guys.
And when they get used to the idea of two men being together it doesn't really matter for them if you are gay or bisexual.
