RECIPE FOR EASY POOFY PANCAKES:
Preheat the OVEN to 425 degrees:
For a 9"x9" pan:
Mix the following in a bowl:
2 eggs
1/2 cup Milk
1/2 cup Flour
a sprinkle of nutmeg (optional)
Then melt a little over 1/2 " of butter in the 9"x9" pan
After the butter is melted, swoosh the butter around, so that the butter completely covers the bottom of the pan, as well as the sides of the pan.
Then pour in the mixture over the butter,
and bake in the oven for 20 minutes
For the larger 9"x14' pan,
Use these proportions:
Mix the following in a mixing bowl:
3 Eggs
3/4 cup Milk
3/4 cup Flour
a sprinkle of nutmeg (optional)
Set the mixture aside, and melt a little over 1" of butter in the bottom of the pan.
Again swoosh the butter around, so that the butter completely covers the pan and edges.
Then pour in the mixture & bake for 20 minutes at 425 degrees.
My mom often made these for us when I was a kid. She called them Oven Pancakes. I have since renamed them Poofy Pancakes =)
You can top them with your favorite topping:
butter & syrup
yogurt & strawberries
yogurt & blueberries
yogurt & raspberries
powdered sugar
jam or jelly

@xticklesmilex hey girl, yah, you should try the poofy pancake recipe sometime. It's super easy. ~Oh, and about my kids, all this time I was hoping it was just my imagination, but yah, they ARE getting big. I keep telling myself not to blink, ~cause I don't want to miss a moment. =)
