actually, most Chiinese chief would deep fry 茄子 first..it's very unhealthy..

@hkturtco I usually salt marinate eggplants and leave it for like 2hrs, the water will come out eggplants and I drain the excess water out before cooking. In that way I don't have to use tons of oil.
