@RZetlin Some fish you don't want alive. For some they drain the blood right after catching for optimal flavor, and some are allowed to sit because they're too oily when eaten right away.

at 3:24 what does 68-10-1 mean? i think its wins loses and draws... in that order?

68-10-1 means wins, losses and draws count. However, Foodnetwork made an error since Morimoto has not been in 68 episodes of ICA yet (unless foodnetwork was counting his japan Iron Chef victories)
