James Barber teaches us how to make pan roasted Salmon with Peppers and Garlic.

Ingredients

2 salmon steaks
2 Tbsp oil
2 coloured peppers (red, yellow or orange), chopped
3 cloves garlic, chopped
1 Tbsp wine vinegar
a sprig of fresh thyme or 1/2 tsp dried
a pinch of cayenne
salt
pepper
1/3 cup white wine or apple juice
a handful of parsley, chopped

Heat a frypan over high heat, add the oil . Add the peppers and garlic and cook for 1 minute. Add the vinegar and cook for 1 more minute. Push the peppers to the side of the pan and add the salmon. Cook for 30 seconds. Sprinkle with thyme, cayenne, salt and pepper, and spoon some of the peppers over the salmon. Add the wine. Reduce the heat to medium, cover and cook for 6 minutes. Serve sprinkled with parsley.

  • ive cut soooooo many peppers in my life, cutting the top or down the middle, takes me forever to get the seeds out, he just did 3 in the matter of 20seconds while talking! ill never cut them the same now!

  • I used to watch this wen I was young my late step father said he liked him also as he was the only chef who cooked and actually made a mess. I always like his humor in many episodes, I got to see him perform live at a Home Show in Duncan B.C. I was also amazed to learn that the Cowichan Valley was his place of residence where I have lived for the past 10 yrs. Jeez I learned that after he passed away in 2007, R.I.P. James we miss u and glad we have these few Urban Peasant vids on utube.

    I used to watch the urban peasant all the time with my mother after school and we always found it funny that booze got added to almost everything including him. He was good and tight by the end of each show :)

  • I loved this show when I was young because he always added alcohol to everything. He'd add a little to the food, then have a swig, and add a little more, and have another swig, and he was always good and tight by the end of the show.

  • I loved this show! He is so refreshing. If seems so genuine and likable. I like how simple his recipes are. I wish I could find more episodes.

  • Loves how he throws the pepper that fell out of the pan back in. Something so humble and real compared to most tv chefs.
