It's difficult to have a Mexican meal without Refried Beans appearing somewhere. Creamy, nutricious and full of fibre, a bowl of Refried Beans takes me back to dusty retaurants in one-horse towns on the edge of the Sonoran desert. Recipe at: http://titlisbusykitchen.com/archives/refried-beans

  • Don't throw out the bean juice!!! Most of the nutrients, not to mention the flavor just went down the drain. Keep all of that wonderful juice that you discarded after the final cooking, and use that instead of the water to moisten the refrying beans! It is marvelous. But definitely try it instead of the water. I bet you'll be pleasantly surprised.

  • I'd suggest not pouring off the broth/ juice from the cooked beans (2:00 minute mark), as much of the flavor/ nutrition is in the broth (and you end up adding in water later on). As well, you might want to add the onion and garlic to the hot oil before the beans, cook until the onion is translucent and then add the garlic for a minute before adding the beans--with some broth.

  • They don't, but if you like them that way, go for it. This small amount of cheese will "disappear" in the beans. Most people would rather see the saturated fat content of the cheese go towards refrying the beans in lard or bacon fat. I use vegeatble oil, but cook the beans in hamhocks.

    The beans above the waterline won't soften and remain hard/mealy/nasty, so use a larger pot and keep all the beans submerged in the cooking liquid.
