This was a testing session before the racing season. The guys were playing with different settings and the cameraman seems liked the "flying board" shots.
The sweet spot in Fomula windsurfing is to drive the board with just enough wetted surface - this is how you get speed, pointing angle and how you can get planing through wind lulls. The boards are technical but at the same time they stay controllable in 25+kts of winds, with the "high wind" sail of 9.8-10sqm ;-)

It looks like these boards catch a lot of air and can get out of control for anyone but an expert.Watch the vids and see the boards come out of the water.
