The man knows his stuff! Fabulous...! Loved watching Essence of Emeril way back in the 90's during the early days of Food Network...yes, he taught me a LOT about cooking! And a FINE person too, to help keep New Orleans going after Katrina..along with others who stayed and rode out the devastation!

So much better to see him actually instruct and cook instead of just playing to an annoying audience that yells and screams all of the time when he throws garlic or hot seasoning into a dish.

i wish u couldve continued showing the recpies from this episode,because those of us who live in Canada are being denied his wisdom,thanx to the racist bastards in charge of the Canadian version of the Food Network,they dropped all of Emeril's related shows nearly 3 years ago,and we've been devoid of him ever since.
