Recipe!!

Pasta Gretchen:

10 roma tomatoes (skins removed, chopped)
1 small onion - chopped
2 red peppers - chopped
5 cloves of chopped garlic (or 1 tbsp of garlic powder)
2 shredded carrots
1/2 cup red wine
1 pound chopped chicken thigh (breast if you prefer)
4 tsps fresh basil (if using dried, use 6 tsps)
1/4 cup Olive oil
Salt & Pepper
Pasta

* Boil tomatoes for 1 minute and remove skins. CHop into 1" pieces.
* In pan, add olive oil, garlic, chicken, salt and pepper
* Saute chicken until brown on all sides, remove chicken from pan
* Add wine to pan and move spatula around bottom to de-glaze.
* Add all ingredients back to pan. Stir to coat everything evenly.
* Cook for approx. 45 on a little less than medium heat.
* May need to add additional salt and pepper to your tastes.
* Bring up to med high heat for 10 minutes.
* Spoon over your favorite pasta!!

  • @filandaserafin You could absolutely cook this meal. Just, instead of chicken, do 1" chunks of zucchini. YUM! But I will definitely do some vegetarian stuff.
