Red cedar for making guitars has to be straight-grained and very uniform in density.

You asked about drying the wood:

As far as I know, there are two ways. Failure to dry it correctly will result in cracked and checked wood:

1. Dry it very slowly (under a house, in the shade, etc)

2. Kiln dry it. I believe the wood is heated, but with plenty of moisture to prevent drying. Then the temperature is kept high, but the moisture is reduced gradually. Apparently this produces a harder wood, in the end, but only takes days, rather than years.

The rule-of-thumb is 1 year per inch. Thus, a board 4 inches thick will take 2 years to dry without cracking or checking (drying from both sides - towards the centre).
