Nice recipe...however, I must make a quick note of something. For some reason you decided to use uber-expensive sashimi grade tuna. This is an unnecessary indulgence for a seared dish. I would use the - much more readily available - "sear grade" tuna to the same effect for half the price.

Yes! But it doesnt slice as nice, so I serve the whole piece of salmon. And of course you must use sushi grade salmon.
