@ilfyj A quick way is, after you've done all the basic stuff (leveling, noise reduction, all that jazz) but before you erase the text, duplicate the main layer and create a solid white fill layer between them. Then you remove the text from the duplicate BG layer with the eraser instead of using the brush. That way, when you're typesetting, you can just make the fill layer invisible so you know where the text goes and what style, and then turn it back on to check your positioning.
