  • very good dish. great use of pig head and not letting it go to waste. some people are better off not knowing where their meat comes from. after working a summer at a Cargil meat processing plant, I found out worst parts are in ground beef. but I still love burgers.

  • @darkgummibear Relax buddy, I love animals too, but this time the poor piggy is already dead so there is no real pain here. What really disturbs me is those fuckers up in Hebei Province (China) who deskin alive those poor "racoon dogs" and leave them agonizing there for hours!...That's what we've got to stop!

  • @RK831 No it doesn't....if you cook a piece of plain beef, no salt, pepper or seasoning it doesn't taste very nice. Especially if you boil it...which is what you do when you poach in a way (although the meat is in the bag not directly in the water). Porchetta di testa is a gourmet item...my husband is Polish/Kiwi and we eat all kinds of offal...the only thing we don't make is brains...and intestines. Everything else is game on :) I'm making porchetta di testa at home today...YUM
