The engineer's way:

put two hands on the body of the banana and twist. Applying torque will induce a shear stress, which is greatest at 45 degree. The "humped line" that runs along the body of the banana is weak against shear, and so when that "line" approaches 45 degree relative to the torque applied, the skin will shear open.
