You don't download the application anymore than you download YouTube every time you use it, which you do, but that's a different story. The high bandwidth stuff that makes apps GBs in size (the data, the actual framework behind the interface) is all on Google's server and stays there. The interface is just HTML.

It's a great strategy, if you don't mind all your documents on the web.

Try playing 3D games or editing pictures (well) and audio using web apps. I mean seriously try to find a web app equivalent to GIMP, Photoshop, or Logic... They don't exist.
