It's actually really simple. Logs hold the services you use. The services hold your screen name used. Screen name holds the chat dialog.
Off the record add on is an interesting way to avoid this. =D Course you could always use "shred /home/.purple/logs/SERVICE/SN/textfile" in the terminal... You will never get this file back!!!!!!!!!! EVER! unless you had copies or backups of it.
You might need sudo to do this can't remember.
