Here we have a gallon of Viognier Wine just after the primary fermentation now undergoing MLF or Malolactic Fermentation. This MLF process converts malic acid to lactic acid + CO2. People often wonder what the process looks like and how it compares to the primary fermentation. Here you can see very small bubbles almost like looking at a soft drink fizzing. This is the byproduct of the bacteria bugs doing their job. When they are done, it will add a nice buttery taste to the wine. The Viognier wine is one that is well suited to MLF and a little oaking to make it a nice big white wine.
