I like Polenta, i tend to make it with fry-light spray, and eat it with tomatoes and scrambled egg. It's a nutritious and easy food which i think get's pretty overlooked in the UK.

Here in Brazil my family and I enjoy using corn oil for polenta and fried polenta. works just fine, and I enjoy adding some butter and olive oil
