This kicked off our foodwishes 3 course meal tonight and it was a total hit. The combination of brie, ripe pear, and cracked black was sensational!

when i did this instead of brie i used vintage cheddar and a little honey instead of pepper it was orgasmic

I just made this... sorta. I used what I had on hand: a ritz cracker, ripe pear, shards of real parmigiano-reggiano cheese, and fresh black pepper. Amazing. It's that "party in my mouth" feeling. The sweet fruit, the tangy & salty cheese, spicy blast of the black pepper, and the texture of the cracker all hit you at once.
I made one without black pepper just to try it and it wasn't anywhere near as exciting as the original. Well done, Chef!
