I just beat these guys on New Game. Level 50, it was kinda easy. I used Quelaags furysword, and the fastest roll. You're absolutely right about knowing when to attack and when to back the f**k off. When Ornstein rushed to me i used two handed and got him down pretty fast. When Smough did a straight hammer attack, i avoided that and got 2 or 3 hits on him. When he jumps up and smashes his butt down the floor with lighting, i broke lock on and rolled away twice. It works! (without ninjaflip ring)

I think this boss fight was made with having a partner in mind. By having someone who's good at dodging distract one and tank it, while you DPS the other down. Either way, I love this fight, it's one of my favourites. :)

I beat them not too long ago, but I had used the help of a summoned a.i phantom. Got my ass kicked plenty of times but with my last humanity used to summon the sun warrior guy I finally killed them. My runs with them always ended up with dragonslayer being the last, which wasn't too bad if you could get him into spamming his lightning throws which made it easy to pelt him with arrows.
