As of right now, Youtube doesn't support video with 50 or 60 progressive fps yet (This should IMO have priority over 4K support, I'd take high fps support over that if I had to choose). Therefore the framerate is converted down. While converting down from 60p to 30p isn't much of a problem (simply use every second frame of the source video), going from 50p to 30p is more complicated and leads to ugly results with shaky video. So I think that Youtube should better convert it to 25p because it's annoying to pre-convert from 50p to 25p before uploading which is unfortunately the only way to get non-shaky video at the moment.
EDIT: It does actually look better right now than an earlier test video which I had uploaded earlier (some months ago) but it'd still be better if YT at least gave us an option upon upload if we want to choose 25p or 30p.
Yes, it's a shame YouTube doesn't give advanced users the options needed to make their videos look the best they can. Considering most people don't know or don't care about these finer details I guess YouTube haven't worried about it. Being as fussy about picture quality as you are I know exactly what you mean. Clearly digital video technology still has a long way to go.
