To make red velvet cupcakes, you don't add melted chocolate to the cake mix! Especially after adding the red dye. You should use coco powder or buy a chocolate cake mix and then add in your red food coloring.

Its also better not to use red frosting instead of red food color. Good try however.

but that isnt red velvet cake..... red velvet is not just cake with red food coloring. it has a a more than slightly different taste to it...
