chances of him surviving are very low, but he could have depending on how long he took to get to hospital. there are kidney machines and such. w/o both though he'd definitely have a drastically reduced life span plus have to go for dialysis regularly

Dude, he would have died of hypothermia. And what good are organs taken without lab conditions (not to mention from a person under influence)? And surgery with a rape pill instead of full-time anaesthesia?

As I said above, the kidneys are the easiest to remove, you don't need to go through bone etc to remove them, plus some like the heart are more delicate yada yada.
Why leave them alive afterwards? I don't know. Maybe a twisted sense of guilt or twisted sense of black humor

Actually, it's incredibly dumb. Why settle for stealing just the kidneys, and leaving walking, talking evidence, instead of taking the rest of the organs, and leaving no-one to report the crime.

Oh it is no urban legend, it's real enough, I can tell you that. It didn't just happen in vegas. And there are worse cases.
Organ stealing is real, in this case they just take the kidneys as they are the easiest to remove on the fly.
Scary, but real.
