Playing defensive means the opponent does not approach often to attack, but rather stays at a distance usually using projectiles to force you to approach them.
To shield grab means to shield as your opponent attacks you and then hitting A or the grab button to grab them, assuming they're in range for that. It's the best way to punish your opponent for being too offensive without taking care to keep distance from you.
It's like you've gotten worse since that vid since Wolf back in April. You're relying on smashes + dash attacks way too much. I'd be curious to see what would happen were you to fight against a human who played defensive and shield grabbed often.
Also, spam short-hop lasers to keep your opponent at bay, not f-smashes. Less ending lag + more range = less punishable.
