the problem i have found with double sided griddles is because both sides have oil on you end up the stove burner heating the oiled side which is both sides. I found it very smoky. THese are ok but i am thinking of buying a catering grade electronic griddle that heats evenly as these have a gap in the middle when placed over two burners. the only way to over come this is to heat it on maximum untill super hot then let ti cool to the desired tempreture but it creates tons of smoke and sucks

That griddle rocks!
We use ours all the time.
There are some thing like tortillas and pancakes i cook on my griddle but i have found alot of stuff cooks better in pans. THe problem with these type of griddles is there is no raised edges to prevent food from spilling. THey are great for pancakes and tortillas though but there is absolutely no point using them to cook omelettes or stir frys. ALso unless you have a long griddle burner the centre part does not get heated evenly. IF u r serious i would reccomend an electric catering griddle

@210482fmj Yeah you make many points that are true but I find that if you pour slow you can make it work. It will smoke a bit too but I use olive oil to protect the cast iron but only after cleanning and is cool. Now I just cook with butter. I don't use the ribbed side but I love the smooth side. The heat verys but I find that to be useful too. When I make an omelet I cut and fold in a way to where that helps. Maybe I'll do an update video to show. Thanks for your comment.

@joezbackwith2gatz I personally think an electric catering griddle is better.

@210482fmj Yeah Im sure it does but for me I keep in the back of my mind survival. If I want to go camping or have a camp fire in the back yard and cook on an open fire or even if crap hits the fan I will be able to feed my family. I try to get things that will always work and do many different jobs. Thanks for taking the time for all your comments and its like I always say. Lets all learn from each other. Joe Tactical

Cast iron is awesome, I have a cast iron skullet that is a least 60 years old. It was my grandmothers. Don't know what cast iron you have but Lehman's has a Lodge Starter kit wth 2 skillets 8" and 10 1/4", a 10 1/2" round griddle and 5 qt kitchen dutch oven for 79.99. I thought about ordering it because it's great price and would make a great gift for some just getting it to cast iron.
