I followed a recipe just like this and it came out bland...I used pecorino instead of parm. is there a specific parm you use? do you think it might be because of the pancetta?

Not sure about the eggs being cooked with only the heat of the pasta cuz the temperature would cool down once added.

@myiphonerocks3gS The pasta is still very hot so it cooks the eggs but if you turn on the fire again you will get scrambled eggs... Carbonara is supposed to be creamy. Try it like this and then you can adjust it if you don't like it.

very nice video.
some suggestions... if you find it, pecorino cheese instead of parmigiano (or half and half for a sweeter taste) and NO egg whites at all... ;)

Thank you for the suggestion. I usually mix pecorino and parmigiano but this time I only had one!!! and I even put too much of it, but it is sooooo good! Viva il parmigiano!
