(1)prepare cooked rice for 2 persons (2)heat up wok & 3 tbsp olive oil (3)add 2 cloves chopped garlic, 2 chopped shallots, 6 slices chopped galangal, 8 sliced kaffir leaves, 2 stalks sliced lemongrass, 6 chopped bird's eye chilies (4)add 10-15 fresh shrimps (5)add 2 tbsp namprik pao (6)add in cooked rice (7)add straw/oyster mushrooms (8)add 2 tbsp fish sauce, 1 tsp sugar, 1 tsp salt (9)add 2 tbsp lime juice (from 1 lime) (10)add some coriander leaves (11)serve

@19702005 i think MSG is alright only that it will dehydrate and make us thirsty. vegetable stock granules is a good substitute too.

i just made this fried rice and my housemate loves it, i can tell it by his squeaky-clean plate. however i didn't use MSG and i added chopped garlic, i substituted the straw mushrooms with oyster mushrooms. it turned out to be the most authentic thai fried rice recipe without using any "instant tom yum paste" at all. this is totally healthy. oh yeah not to mention i used olive oil too!
