Super saturated solution of sodium acetate crystallising before your eyes. A seed (of crystals) is required to start the process of crystallisation. The process of crystallization is exothermic: the cool solution becomes warm as the crystals form. This is used in heat-packs that medics carry. Sometimes also called "Hot Ice"
can you eat it :D

@lKento It's not poisonous, but I wouldn't recommend eating it...especially anything more than a tiny amount

At room temp it won't dissolve. To dissolve it needs to be fairly hot. I use a water bath to avoid overheating it... although in the end I used the microwave each time I wanted to re-dissolve the crystals (on (v.low) 40% power to avoid making hotspots).
At room temp the solution will want to crystallize. So if there is anything in the solution, or even dust on the container, then it will crystallize out. If it's clean, then you can leave it for days without it crystallizing.
