2 eggplants, peeled and sliced
1 egg
1 cup milk
1 cup bread crumbs
1/2 cup flour
2 cups grated mozzarella cheese
1 cup grated parmesan cheese
1/2 cup olive oil
salt & pepper

I forgot to mention in the video that you have to rinse the salt off of the eggplant after it's sat for 30 minutes. Pat dry.

In a shallow dish (I used a pie pan) beat your egg and add milk and beat the mixture. In another shallow dish put your flour, salt and pepper. Heat the olive oil, about medium high. Dip each piece of eggplant in the egg mixture and then dredge in the flour and gently drop in the hot oil. Turn the eggplant when it is golden brown. Put your fried eggplant on paper towels to soak up the extra oil.

  • That's pretty much how I make mine only I add lots more seasoning...like garlic and onions. did u see how I made lasagna from scratch? It's very tasty too. lol

  • @IreneK43 I had seasoning in the marinara, garlic, onion and basil - all fresh from the farmer's market. Yum! I'll check out your vid.
