In this episode, we'll be making a sponge mix that is easily adaptable to almost anything! This time, we'll be using them to make mini jam-filled cakes!

The Measurements:

Weigh three eggs
Then get their weight in butter, caster/superfine sugar and self raising flour

Sorry that I can't be more specific, but it really does come down to how much your eggs weigh.

These cakes are so easy to make, so I hope you have a go at them! Also I apologize for the odd lighting, I actually had the curtains open, so there is some glare here and there.
