I've had several requests to share a carrot cake recipe and I am very pleased to finally have this filmed for you. I have been making this cake for a looong time - way back before fat & calories were in the news quite so much (so it's not the healthiest!) However, it is a delectable cake so a once in a while indulgence can't be denied...enjoy! And don't forget to check out my video on Cream Cheese Frosting - the perfect way to top this moist and spicy cake! Carrot Cake 4 eggs 1 cup honey 1/2 cup lightly packed brown sugar 1 cup oil 2-1/4 cups flour 2 tsp baking powder 1 tsp cinnamon 1/2 tsp salt 1/2 tsp baking soda 1/2 tsp nutmeg 3 cups grated raw carrots 1 cup raisins 1 cup chopped walnuts - optional 9"x13" greased cake pan, 325 degrees Fahrenheit

I don't know but I suppose you could...maybe check a substitution cooking website - not sure if it is cup for cup...but the honey really does add a nice flavour - you can subtly taste it - so give it a try. I just used no-name honey.
I love carrot cake. It looks so yummy. Have you ever tried replacing the oil with apple sauce? That would reduce the fat intake. I use apple sauce in cakes or corn bread & can't tell the difference in texture or taste. The measurement is the same as whatever is called for the oil. I don't know how it works but it does.
