Phoebe bakes pizza with a little magic.
(Note; this is the very first version, there are no titles yet and a long blank spot at the end. Will be update later.)

The video, starring daughter Phoebe, is four years old but should give you an idea as to how I make pizza dough/pizza pies.

Let me give you my basic, easy recipe:

Mix the following in a mixing bowl (I use a kitchenaid mixer, very handy!)

1000g flour (I use semolina 50% & something like a high-protein Kornax white flour, 50%)
20g salt (sea salt preferably)
20g oil (extra virgin)
20g sugar (I prefer honey, then 25-30g)
11g dry yeast, usually one packet
250-400g *water, bath temperature (38-45C)
200g sour dough (if you don't have it, no big worries

*The only tricky part is the water which must be added gradually.
The flour has an amazing absorbing capacity, you'll probably add more than you think necessary.
Really, the best is to get the dough as wet as possible.
Use your fingers as little as possible if you have a mixer.

Once the dough has resilience of a loose buttock, slather it with a bit of oil and leave for 40-60 minutes to rise at room termperature.
Dough should increase in size by 50-100%.
Punch it down thouroughly with a firm spatula if you don't want to get your hands oily.
Reform dough and cover in container three times volume of dough.
Chill dough for 2nd rising, either in refrigerator or outdoors at above freezing temperatures
Total rising time should be at least three hours, five is near ideal (so start around noon for a pizza dinner)
Dump dough on table with plenty of flour (I use rye or rough semolina for this stage)
dough weight should be approximately 1600 grams; ideal for four pizzas.
Take 300g of dough for creating sour dough (put in plastic box and leave in fridge, replenish every 7-10 days)
Form dough into balls of 350-550 grams
Use fingers, flour and rolling pin to shape into circles
Use baking paper for final forming

Preheat over (225-255C) (Ideally you could buy a pizza stone, sold in at least 2 stores in Kringlan)

Once you've dressed the pizza dough with your ingredients of choice,
Place in oven and let it bake for 2-4 minutes
Open oven, slide something flat underneath the partially baked pizza and remove the baking paper
Then let it bake for probably 10 minutes more.
Every now and then, quickly open the oven and check underneath.
When bottom is golden brown but top crust edge is still under-done, get 2nd baking sheet on higher rung of oven and transfer pizza to it.
(the key is to get the pizza done properly on both top and bottom. Sounds tricky, but really not so hard.
Total baking time should be 15 minutes
