This is not quite a dumpling, though it does involve dough, filling,
shaping and a mold! The recipe is in my cookbook, "Into the Vietnamese
Kitchen" (Ten Speed Press, 2006). Moon cakes are called banh trung thu in Vietnamese. My family brought this recipe from Vietnam and it's been in our family for over 30 years.

  • I think the hole on the side of the mold is a release hole from the vacuum created when you press the moon cake inside the mold, it releases easier .
