Dummy cakes are often decorated to use as display pieces. I use dummy cakes in my Bride and Groom workshops as this is also how I would create a Bride and Groom for an actual wedding cake, although I would use a 3mm thick cake board which is the same size as the dummy if a stacked cake is required. Creating the happy couple onto a dummy cake and using this as a top tier allows them to take the entire piece home intact giving them a wonderful keepsake.

  • Any cakes I have on display that are out in the open can just be dusted lightly with a soft pastry brush just to get rid of any dust. If it's out in the open to be viewed and admired, dust will gather so it's up to you to keep an eye on it and treat the piece as an ornament and keep clean as best you can. Glazing won't prevent dust landing on it.

The mats I use are from Orchard Products. You can find them online.

  • can any local baker do a dummy cake for you?

  • I wouldn't think so. This is something you would do yourself to show off your own work.

  • Can you use a dummy cake for an actual wedding? I have to do a cake for 500 people. I thought if I just did a smaller real cake mixed in with the fake cake that would work...have you ever done that?

  • I always do that for my wedding cakes with figures on top. It means the top tier can be taken off and kept as a reminder of the day. I make an extra cake for cutting and keep it separate.

  • size: Huoooge rollin' pin. Indeed. Very interesting bit about keeping it thin for a dummy. Me being the fondant grunt for my gal, I'm curious what "thickeness" I should use for an actual cake though? :)

  • @cheferos you have that "roond" the wrong way Chip McRib! The thicker paste should be ON the dummy, not off! Your gal knows her stuff without any hints and tips from me. I'll help you with this issue when I see you both next month! Woohooo!

  • Hi, I have a little home based business - Custom Cakes...I wanted to make a few dummy cakes as displays in my studio. Can you use Royal Icing for piping and leave it on your cake? Is that OK ...will it keep? Or do you use something else? That little bride and groom is gorgeous!
