Olive oil at high temp becomes toxic also cooking the greens kills the nutrients

Olive oil is healthy as long as you don't heat it to a certain temperature. Most oils you don't want to heat to certain degree. You can use other oils that withstand heat better like grape seed oil, coconut oil, and others.

im from a black family but i'm the black sheep (or white sheep, technically... however you look at it) & i can't wait to try to cook these! im in my 2nd yr of college & i've been a vegetarian for a few years & i've been left out of the holiday meals cause i couldnt eat anything! i cant wait to convert my family to this delicious, quicker, HEALTHIER way of cooking collards :)

just putting it out there, vegetarians can use Vegetable broth/stock, and still get a nice rich flavor like you get from your chicken stock. Water doesn't add any taste! Those look great though

Great tips on cooking meatless collard greens. I was surprised that you didn't mention adding garlic though. I'm trying to reduce my meat intake and eat more healthy greens and fruits. Thankyou and I look forward to more recipes.

PS we eat them very lightly steamed..sometimes 5 minutes....
