the long awaited sequel to what has somehow become a classic, eggplant gratin. :) hope you all enjoy...

special thanks to drlemur for helping hold and position the camera in the majority of these shots.

the veggies i used:
green onion (chives)
red pepper
mushrooms
asparagus
eggplant
(but you can choose your own veggies)

batter the eggplant in egg (with a small amount of milk) and coat with flour and breadcrumbs (seasoned with parsley, garlic, salt, and pepper) then i added a slice of cheese on the top of the eggplant (we used a specialty tomato/basil cheese) and battered the eggplant yet again, being sure not to let the cheese fall off.
cook in olive oil until eggplant is tender enough to poke a fork through easily. bring veggies to a tender state in olive oil simultaneously.
begin to boil pasta (i used fettucini noodles)
to make my alfredo sauce:
heat on LOW 1/2 a stick of cream cheese, 1 cup of milk, 1/2 cup of parmesean cheese, 1/2 cup of tomato paste, paprika, parsley flakes, salt and pepper. heat until sauce thickens to an alfredo consistency. to get the consistency right, add more cream cheese or tomato paste (or milk depending upon the direction you're trying to go) stir vigorously so as not to curdle the milk.
when all 4 pans are complete, combine them all together and enjoy!

  • Superbly done. You are a very skilled cook/chef, but I wonder how it would have been without the Wild Turkey. ;) I also notice that the table was set for two, and that you seemed to have had off camera assistance. Skilled camera work and edition too. Nice, really nice.

  • Considering that Dan's last video before he left for the US was him struggling with how to cook bacon, your visit must have been a real culture shock!

    Makes me almost glad that what happened happened, because otherwise you wouldn't have come here for ages.
