I've downloaded the chords sheet and practiced a while, but I still don't completely understand the technique used for strumming, is it the D, A, E strings first and then E, B, G at some parts?

That's right! The on the first bunch of chords you pluck the bass note then the strings e, B, G in that order - on the second lot you pluck them in the revers order.
The bass notes are on Am - A string, F - E string, G - E string and C - A string.
On the last C chord you pluck the strings G, B, e pulling off on the B with (presumably) your index finger for that bad-ass twiddly bit!
