My family's (Le Blanc) version boils the chicken in the pot (no baking). Actually a true "old time" version would call for a stewing hen... "hen"ce the boiling. As far as grating goes, you can do that with a food processor and you'd never know, but you can't replace the manual squeezing part ( a juicer goes overboard and you can taste the difference). The bricks (which are available in grocery stores in South Western N.S.) are OK if you're in a hurry but the end result isn't the same.

Good news, since the 1990's you can now spare yourself all the hard potato grating. Now you can purchase packaged pre-grated potato.
Although, I am not sure if you can purchase in eastcoast grocerystores not in eastcoast.
