Easter Basket "Springtime" Cupcakes (Almond Vanilla Cupcake Recipe)

Spring will be here before you know it and this warm weather really has me in the mood for all things Spring!! Growing up, my mom always made these cute little Easter basket cupcakes around Easter time to take to school. Everybody loved them!

I especially like the homemade almond vanilla cupcake recipe!! They are soft and moist and is always my go-to recipe when I need a basic cupcake for decorating.

For those who don't like coconut, there is this really easy youtube video that shows you how to make the frosting look like grass (pretty neat!) search "cute easter nest cupcakes" and it should come up.

AWWW!!! I love it, You are so talented, I'm definitely making these, I just have to leave out the coconut because my daughter doesn't like it. Any suggestions on what can be used besides coconut??

@ladygirl99 When I leave off the coconut I just use the green frosting and sprinkle green sugar crystals on top.

OMG!!!!!!!!!!! I have been looking all over for a moist vanilla cupcake. Cupcakes can be so dry. I just wanted to take a sec. and say Thank you for the best homemade vanilla cupcake I ever baked!!!! Do you have a moist choc cupcake recipe??

I was thinking bout makin these 4 my sons class so I tried them today n they came out soooo cute. Lik most kids i dont care for coconut so I used the green icing with the star shaped grass like tip. I thought it would be a lot more difficult considering I never decorated a cake or cupcake except ur basic icing spreading. but I was surprised how easy it was. Of coarse it's more time consuming than the coconut but overall still quick. Luv it! Thanx diva!

Thanks so much for this video! I just made them today for my son's preschool tomorrow and for work. I made a little video response and posted it. I did mini cupcakes and regular ones as well. The mini cupcakes have a milticolor batter. I used your batter recipe and substituted the 1/4 of crisco for 1/2 of unsalted butter. They turned out good! Thanks for this awesome idea!
