a double spruce top seems to be too much twang and punch though... I prefer cedar if you're going double top for the perfect marriage of punch and warmth.

Yes, the Vicente Carrillo, Gabriela models have Double reinforce Sides, the idea is, that the vibrations of the Soundboard are more focused, and vibration is not lost to the sides.

Yes, 2 Very Thin Tops glued together with grains crossing each other, makes for great projection and Sound.
