Thermals are completely random and move with the wind. You know you are in one if your plane suddenly rises. If your plane gets pushed and rolled a little bit it means you are close to one.

How do you know where the thermals are? Or otherwise when you've caught one?

Most videos like this have some sort of soundtrack. I'm glad this didn't. The wind speaks for itself.
