If your brigade fumbles a service you can count on your compassionate exec to pass out hugs and cookies because it's all about having fun, not executing food properly in a timely manner so the owner can maximize his or her profits.

Another field that the media is trying to exploit, it isnt a sport or a competition factor, get that notion out of your head, a chef gets a job in the kitchen not to work with high quality ingredients or the cook for high echelons in society but rather because there is something indescribable, the feeling that you get, that warmth sensation in your heart when sending the plate out, knowing that you put the exact same amount of love, effort, and enthusiasm in your own plate every time. at the end, Bourdain said that Hung (top chef season 3) totally deserved to win. i agree 100%. Hung is the best and fastest top chef in the show's history.

Oh Tony Bourdain...while he (by his own admission) is not the best chef out there I don't believe that I've heard a chef talk about the actual process with such candor and wit.
