Slate V's Emily Calderone sets out to recreate a favorite dish from a favorite restaurant, David Chang's Momofuku. Chang has just released a new cook book, and Emily uses it to see whether homemade pork buns can rival the real thing.

  • Good job. I followed the recipe and turned my pork belly into spam. Some say the pork is submerged in lard and others believed they're cooked in a bath of broth. Either way, good video. My buns turned into hockey pucks when I made them.

  • Did you stick the pork in the fridge for 6 hours before cooking it as well as cooking it on high heat and then lowering it to a super low temp? I think thats why it didn't turn out as well...props for making this though :) I made this as well and although a tedious recipe, definitely worth it
