RECIPE:
Lemon & Mushroom Omelette
- 3 eggs
- 1-2 tbsp Lemon Juice
- 3-4 sliced white-button mushrooms
- ¼ cup chopped chives
- 1 tsp crushed garlic
- ½ tsp salt/2 tsp mixed spice
- 1 tbsp butter or margarine
- 1 tbsp lemon zest
1. Add lemon juice, mushrooms, chives, garlic and butter to frying pan. Cook until soft and brown
2. Whisk eggs, add salt/spices and pour over cooked mushrooms. Cover with lid to allow to cook thoroughly. Cook.
3. Once cooked, add to serving plates. Garnish with chives, extra lemon and salt, and serve with toast or bagels or even simply by itself!
If you want, you can add your own ingredients or you can replace mushrooms altogether! Try either a combination of or all of these delectable replacements such as spinach leaves, tomatoes, onions, capsicums and even cougettes. Experiment and make this recipe your own!

I never thought to combine lemon and garlic before, yet the combination sounds interesting and delicious! I feel like trying this! :) If I don't have mushrooms, could I omit it or subsitute it for something else?

Hi there!
It's actually a very good and simple combo. I really like both garlic and lemon, adding them together really gives it that extra tanginess to it. I say 1tbsp of lemon, but it depends on how much tanginess you want so if you want more, go for it!
As for mushrooms - they are not necessary. I just really enjoy mushrooms and it gives the omelette texture. You can, of course, swap for other ingredients like onions and tomatoes, or simply leave it as is.
