@ericbekkers adducations? hahaha well in any case, i know it's preferable to use one true tasting spoon that doesn't contaminate the source, but it happens often in restaurants and it's really not as big of an issue as you may think. after all, these are the same people that are touching your produce and the meat and such, and they're probably transferring as much bacteria during that process as they are reusing a tasting spoon. in the end, it's pretty negligible.

I don't know if that's normal, but I have seen GR himself get spit on a towel to wipe smudges off a plate of food about to be served. I saw him do this on tape,more than once. O-M-G!

In Ramsay's Boiling Point he did just as you say, but the impression I got from the scene was that he was experimenting in the kitchen, and the plate he was wiping down was not one made during service.
