He use an oboe without a thumbplate. You se that better in the Queen of Sabe piece.
The thumb movement is just when he use the second octave key.

@Music4eva02 Thank you for that insightful answer but I do know how to play the oboe, FYI. The notes he was playing at that point were probably in the second octave at a guess and there, there are only two notes which don't require the thumb plate; B flat and C. For the majority of notes the thumb plate is needed to be pressed down, even when pressing the different octave keys. Unless this is a very unusual oboe which isn't played the same as usual I don't believe what you said is true.
