Yields: 6 to 8 servings
Ingredients:
2 cups brown rice
1 ½ lb. ground round
2 tbsp. Cajun seasoning
1 onion, chopped
2 (15oz.) cans black beans, rinsed and drained
1 (6oz.) can chopped black olives, drained
¼ cup red wine vinegar
2 tbsp. fresh cilantro, chopped
Preparation Directions:
~ Cook rice according to pkg. directions. Set aside.
~ In a large skillet brown ground beef, adding Cajun seasoning and onions during cooking time; cook until beef is no longer pink and onions are tender. Stir in beans, olives, and vinegar. Cover and simmer for 20 minutes. Add cilantro during last 5 minutes of cooking time.
~ Serve over rice.

omg..it looks good but thats not cuban rice..no..no..no...i need a big colada now..just for me..black beans are cooked all day..with a meaty pork bone and the right ingredients..green pepper,onion,garlic,cumin, and secret stuff. that aint congri?.

Please don't disgrace or shame my culture by saying that this is Cuban. Nothing here was even remotely close to Cuban. I would not recommend this dish to anyone who is trying to cook or experience Cuban cuisine. This was awful.

I don't know where you got this recipe from but that's not Cuban. Cilantro and brown rice? a Cuban doesn't use any of those ingredient and we'll never put ground meat in black bean and rice so don't call it Cuban.

lol my moms from honduras not cuba but she makes this all the time we eat this with a shot of sour cream on top and tortillas on the side :P also she doesnt use use olives.
P.S. if u just have black beans onions and rice we crumble feta on top which is one of my favorite sidedishes
