鮭魚豆腐煲 【郭主義師傅】

炒菜愛注意

食材:
鮭魚肉400g、嫩豆腐1盒、大辣椒1根、蒜頭5顆、蔥3根、乾豆豉、雞高湯1碗、太白粉1小碗

調味料:
醬油2大匙、紹興酒1大匙、糖1大匙、白胡椒粉、香油1大匙

做法:

1.起鍋不放油,將鮭魚切2公分四方丁,放入鍋中煸炒出油,兩面煎香約七分熟金黃上色,即先盛出備用。

2.同上鍋,用鮭魚油爆香辣椒、蔥段、蒜片、1湯匙豆豉至香,再倒入高湯、2湯匙醬油、1湯匙紹興酒、少許糖、白胡椒粉、少許水煨煮3分鐘,再將豆腐、鮭魚丁入鍋煨拌煮至­入味。

3.預熱一砂鍋。待步驟2料頭入味收汁後,加入太白粉水勾芡,滴入香油點香,盛入砂鍋即完成。
