I show amaranth and purslane growing in my garden, both good to eat. In Wikipedia, unfortunately, they are both known as pigweed. Actually, amaranth is more commonly referred to as pigweed. Purslane (Portulaca) is just known as Purslane.
you can still eat Amaranth when it's much taller...just pick off
leaves & cook them like any other green or spinach. The smaller leaves are more tender & don't have to be cooked as long.
People is Mexico eat it all the time. The plants around here get 4 feet tall if you let
them. You can still eat the leaves. It's also called careless weed in Texas. Don't know if I spelled that right but that's how it sounds. Some folks call it Mexican spinach.
i actually just learned about this from my Syrian neighbors....i was interviewing them for project on Arab food, we had the interview on her porch ...and she just randomly get up and picks 10 sprouts of purslane and she goes " to you this is a weed, its trouble...to us its special and it sooo good"
It's really sad that we frown on people letting their "weeds" grow. Everyone seems to think the only acceptable plants around the common urban home is to be grass. Don't dare even letting the dandelions get out of control or the weed police will show up. Grrrrrrr. We "modern" folks are actually very backward huh.
